Beef Stir-Fry

Makes 4 servings

Ingredients:

  • 1/2 lb roast, cut into strips
  • 1 small onion, large dice
  • 1 stalk celery, large dice
  • 1 tsp fresh chopped ginger
  • 1 clove garlic, chopped
  • 2 carrots, large dice
  • 1 cup green beans, cut in 1 inch pieces
  • 1/2 broccoli, small florets
  • 1 zucchini, large dice
  • 1 green or red pepper, cut in strips
  • 1/2 lb snow peas, cut into 3 pieces
  • 1/2 eggplant, coarsely chopped
  • 1 can white beans, rinsed

Directions:

In a frying pan, cook beef strips, garlic and ginger until cooked. Add veggies and put a lid on pan to let veggies steam. Add beans and cook for 5 minutes.

Serve with rice or noodles.
