Meatloaf Balls

Makes 4 servings

Ingredients:

  • 1/2 lb lean ground beef
  • 1/2 cup dry red lentils
  • 2 cloves garlic, chopped
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 large carrot, grated
  • 10 green beans, small dice
  • 1/2 eggplant, peeled and coarsely chopped
  • 1/2 tsp each of of basil, oregano, salt and pepper
  • 1 egg
  • 1/2 cup oatmeal
  • 1/4 diced tomato

Glaze:

  • 1/2 cup ketchup
  • 4 tbsp brown sugar
  • 4 tsp white vinegar

Directions:

In a saucepan, biol lentils until mushy, drain and cool. In a frying pan, saute garlic, onions, celery, carrots, green beans and eggplant until tender. Coll

In a bowl, combine ground beef, seasonings, diced tomato, egg, and oatmeal with cooked lentils and cooked vegetables. Mix well.

Roll into balls and place in muffin tin. Bake for 30 minutes at 350 F. Mix ingredients together for glaze. After 30 minutes, glaze the meatloaf and bake for another 5-10 minutes.
