Beef Stir-Fry
Makes 4 servings
Ingredients:
- 1/2 lb roast, cut into strips
- 1 small onion, large dice
- 1 stalk celery, large dice
- 1 tsp fresh chopped ginger
- 1 clove garlic, chopped
- 2 carrots, large dice
- 1 cup green beans, cut in 1 inch pieces
- 1/2 broccoli, small florets
- 1 zucchini, large dice
- 1 green or red pepper, cut in strips
- 1/2 lb snow peas, cut into 3 pieces
- 1/2 eggplant, coarsely chopped
- 1 can white beans, rinsed
Directions:
In a frying pan, cook beef strips, garlic and ginger until cooked. Add veggies and put a lid on pan to let veggies steam. Add beans and cook for 5 minutes.
Serve with rice or noodles.
